COCONUT MOJITO
Coconut is everything Summer and tropical. Coconut scented tanning lotion or body sprays. Coconut flavored desserts and drinks. This recipe is no different.
This recipe uses thick coconut cream and preferably coconut rum. You can use regular white rum if it’s what you have on hand but I recommend the coconut rum if you have it. Use a shaker to break up the thick coconut cream when making this drink because a simple stir won’t break it up enough.

This watermelon mojito recipe is made like any other classic mojito using fresh mint and lime juice, sugar, white rum and club soda. The addition that really brings it all together is fresh watermelon juice.
You can collect this juice from cutting up a fresh watermelon, or you can make your own by smashing some watermelon pieces through a sieve or blend them in a food processor.
If you do the food processor method, you will get a slightly thicker texture to your mojito from the pulp. Consider maybe freezing the puree and making watermelon mojito slushies!
